Phosphorus is a mineral present in all living cells, which never occurs on its own. It is the second most common mineral in the body, after calcium.

In the human body, the greatest quantity of phosphorus is contained in bones and teeth (up to 85%), muscles and nerve tissue. It combines with calcium to create the balance necessary for the growth of bones and teeth and formation of nerve cells.

It is essential for the assimilation of carbohydrates and fats. It aids the body convert proteins, fats and carbohydrates into energy. Pyridoxine – vitamin B6 (16), is a part of the B complex and is water-soluble.Vitamin B6 stimulates the proper assimilation of fats and proteins, and contributes to the transformation of tryptophan (a basic amino acid) into niacin. Its presence is necessary for the formation of antibodies and red blood cells.

Beta-carotene is a carotenoid, naturally occurring pigment found in plants and is called “provitamin A” because it is a precursor to production of vitamin A in the body.

It takes part in the synthesis of proteins and antibodies – immunoglobulin. Increases the growth and development of bones, protects buccal mucosa, nose, throat, respiratory tract and lungs. It is used as an additional active ingredient in the treatment of emphysema and overactive thyroid. Beta-carotene plays a vital role in eye health. It nourishes the visual rods and cone photoreceptors in the retina, and is directly linked with the normal functioning of the retina and macula, providing day, night and sharp central vision . Beta-carotene also stimulates the functioning of the immune system and it acts as an antioxidant to help protect cells from the damaging effects of harmful free radicals. Vitamin A is a fat-soluble vitamin and comes from two sources – from some animal foods and from plant foods.

Einkorn contains carotenoids which are a form of Vitamin A. Carotenoids such as beta-carotene are converted to vitamin A in the body.

Vitamin A is essential for cell growth and vitality. It builds up resistance to respiratory and other infections and has vital importance on eyes, lungs, stomach and intestines. It provides healthy eye sight, growth for young organism, development of teeth and bones, strengthens the skin and the mucosa, regulates the activity of the thyroid hormone in metabolism, prevents sclerosis, etc.

The best source of Lutein among grains.

Lutein – one of the known natural carotenoids. It is used by organisms as an antioxidant. By protecting against  eye disease lutein also prevents cancerous processes, cardiac pathology, type 2 diabetes, etc. It improves the state of blood vessels, prevents atherosclerosis (fatty deposits in the arteries), which is a precursor for heart attacks.

Einkorn contains the highest levels of lutein among wheat species, accounting for 77%–83% of the total carotenoid content, followed by Zeaxanthin at 9–13% of the total carotenoid content.

Einkorn has a significantly high level of Selenium

The studies show that Einkorn has a higher content of Selenium as well as antioxidants in Einkorn varieties (50.0-54.8 mg/kg DM and 507-612 mg/kg DM respectively) in comparison with the results of conventional wheat varieties (Se – 29.8-39.9 mg/kg DM and antioxidants – 502-601 mg/kg DM) (J. Lachman et al., 2011).

Recommended nutritional intake in the USA, Canada and the European Union is 55 mg Selenium per day.

Selenium is able to clear toxic metals (mercury, lead, aluminum, cadmium, etc.) in the body. It acts as a powerful antioxidant and helps fight the damage caused by free radicals. Selenium is a naturally occurring micro-element with antioxidant properties that is vital for human health.

Einkorn is an abundant source of Zinc, Magnesium,  Manganese and provides a valuable source of Tocotrienols and Tocopherols, powerful antioxidants that form of Vitamin E.

Grains and flour richer in protein: estimated level of protein for Einkorn is 16.0-16.5% in comparison with a lower estimation for wheat – 14.9-15.3%

Gluten? 

Gluten is a general name for the proteins found in wheat. When mixed with water the dry flour  form gluten from two proteins – gliadin and glutenin.

A number of authors state the substantial difference in the gluten content of Einkorn when compared to hybrid wheat varieties.  Researches are focused on the effect of einkorn’s gliadin on intestinal mucosa.

The gliadin-glutenin ratio of einkorn is 2:1, compared to modern hard red wheat, which is 0.8:1.

Although it has gluten, the proteins that make up gluten in einkorn have a different composition than the proteins in modern wheat and certain proteins are completely absent. This variation in the balance of proteins makes einkorn much easier to digest and some people who cannot tolerate modern wheat find they can tolerate einkorn, however it is not recommended for people with celiac disease or wheat allergies.

Einkorn as Whole grain

Many scientific studies have shown that eating whole grains strengthen the heart and circulatory system, protecting against heart attack, stroke, high blood pressure, and other cardiovascular disorders.

Einkorn berries are whole grains and contain the entire portion of each kernel –

  • The bran (outer layer of the grain) – consists of important antioxidants, B vitamins, fiber and trace minerals;
  • The endosperm (middle portion of the grain) – contains carbohydrate and protein. It provides also B vitamins, iron and fiber;
  • The germ (the inner “heart” of the grain) – the smallest part of the kernel contains B vitamins, protein, minerals and healthy fats, antioxidants and phytonutrients.

Einkorn contains protein, carbohydrates, fat, vitamins and minerals and provides us a natural balance of energy and nutrients.

The complex carbohydrates, or polysaccharides, in Einkorn as whole grain, are gradually and smoothly assimilate through the digestive organs, providing the body with a slow and steady source of energy.

The B vitamins along with complex carbohydrates, contribute to mental health and  clarity. Whole grains and other foods high in complex carbohydrates increase the brain’s supply of serotonin, a neurotransmitter believed to induce calm and relaxed mental states.

 

Einkorn as NON GMO

Einkorn is a diploid grain, meaning its chromosomes come in sets of two. It has 7 sets for a total of 14 chromosomes. Scientists have called the genome or organization of chromosomes in einkorn the A genome. Einkorn contains only the A genome and as diploid there is only one set of chromosome pairs, both of which are einkorn.

Einkorn has become inherently strong crop from surviving thousands of years of harsh growing conditions in its natural environment

It has NEVER been hybridized and its simple structure remains unchanged and genetically pure to this day.

Einkorn – Grown as Organic crop

A great advantage of Einkorn is that it is not polluted with fertilizers and pesticides. Results from laboratory testing show that in the samples of Bulgarian Einkorn the most current and hazardous pollutants (pesticide residues, mycotoxins, polychlorinated biphenyls, dioxins, furans (PCBs, PCDDs, PSDFs) are below the limits of quantification of the corresponding method.

This fact can be explained by einkorn’s lack of need for artificial fertilization or pesticide treatment. Fertilization of the crops does not increase yields, but does the opposite: when fertilized wheat ears thrive too much, they break and that makes harvesting impossible. The natural defense against rodents, vermin and fungus is the hard husk that encloses each grain.

This husk that covers Einkorn seeds and the thickness and shortness of the ears of wheat build the natural defense system of the plant against diseases, enemies, lodging. Therefore, the use of chemicals for plant protection (herbicides, insecticides, fungicides etc.) is not necessary .
It is potential crop for environmentally friendly organic farming with high nutritional values that can be grown without using pesticides or fertilizers that contain chemicals.

Einkorn as Alkaline Food

The higher content of potassium, calcium, magnesium and iron give the alkaline properties of Einkorn.
