
Boza, like other fermented products such as yogurt or kombucha contains many beneficial bacteria. It contains large amounts of vitamins B (B1, B2, B3, B6 and B12), vitamin A and E, iron and is regarded as a drink that fills the body with strength and energy.
Boza should be drunk well chilled, but without an addition of ice.
Ingredients:
- 8 cups water (may increase to 10 cups)
- 1 cup einkorn berries
- 1 cups brown sugar
- 1 cup sourdough*
Instructions:
Pour Einkorn berries into a pot let soak with warm water 4-8 hours. (you can skip this step)
Rinse well Einkorn under running water.
Fill a large and deep pot with 8 cups water.
Add Einkorn berries and boil until mushy (1,5 – 2 hours).
When cooled use a blender to puree the berries until smooth.
Add 2 more cups of water and sourdough.
Mix well and leave to stand overnight.
The next day, strain and add sugar. Mix until the sugar melts.
Keep in the refrigerator.
* May replace sourdough with 30 g. yeast.
