Einkorn cream soup with vegetables



Einkorn Creamy Vegetable Soup

1 cup uncooked Einkorn berries
1 medium onion, chopped
1 bell pepper, chopped
1 carrot, peeled and chopped
5 cups water
1 cup vegetable broth (optional)
salt to taste
30 g butter
2 tablespoon olive oil

Rinse well einkorn under running water. Then place it in a large, lidded saucepan and cover with water. Bring to boil over medium heat. Add vegetables, reduce the heat to a simmer and cook for 45 minutes.
Remove the soup from the heat and add the butter and olive oil. Use a blender to puree the soup until smooth.
Season with salt.
Garnish with fresh chopped parsley.
