Sofia cookies


– 100 g Einkorn flour
– 120 g Oatmeal flakes
– 150 g Brown sugar
– 1 large egg
– 125 g Unsalted butter, at room temperature
– ¼ teaspoon Vanilla extract
– 1/2 teaspoon Baking soda
– 1 teaspoon Cinnamon
– Pinch of salt
– 50 g Walnuts
– 50 g Raisins


Cooking instruction:

1. In a medium bowl mix together the egg and sugar. Add the butter and vanilla and stir to 1-2 minutes until thoroughly combined.
2. In a second bowl stir together all dry ingredients: the flour, baking soda, oatmeal flakes, salt, cinnamon, walnuts and raisins and add to egg mixture.
3. Mix with a spatula until the dry ingredients are completely absorbed.
4. Cover the bowl with plastic wrap and refrigerate for 1 hour.
5. Preheat the oven to 350 F (180 C). Drop 1 tablespoon of dough 1 inch (2-3 cm) apart onto a baking sheet. Bake for 10-12 min. until the edges have begun to brown. Transfer to a wire rack to cool completely. The cookies can be stored in an airtight container for up to 3 days.
