Vegeterian pilaf with Einkorn and Vermicelli (durum wheat)

Vegeterian pilaf with Einkorn and Vermicelli (durum wheat)
Ingredients:
2 cups cooked Einkorn
1 cup Vermicelli (durum wheat)
4 large carrots, shredded
1 onion, diced
50 ml olive oil
250 ml water
1 teaspoon salt
Instructions:
1. Heat the olive oil in a frying pan over medium heat. Add the onion and cook it until slightly soft. Add the shredded carrots, salt and 250 ml water. Reduce the heat and simmer around 15 min.
2. Add Vermicelli and if necessary more water and cook around 3 min.
3. Add cooked Einkorn. Mix lightly to combine.
4. Remove from the heat and once cooled serve.
